Beer release after beer release, the Gibsons operation is building a strong case for becoming one of my favourite B.C. breweries at the moment. They’re not overly rocking the boat, but mostly crafting exceptional renditions of established styles.
Kellerpilsner is an unfiltered variety of the world’s most popular (and most commonly watered-down) beer style, bringing a little more depth to pilsner’s clean, bright lines. And gosh darn it if Persephone hasn’t nailed it again.
Their take on the style is a lightly cloudy golden straw colour, capped by a bright white dense lid of tiny-bubbled foam.
There’s juicy apple on the nose that immediately gets my mouth watering, alongside some lightly bitter herbs and gently biscuity malt.
That light apple fruitiness delivers up front with some toasty biscuity malt. The flavour profile then moves into a deeper graininess in the middle before a fabulous herbal bitter whack. Herbal and grain notes linger in the aftertaste.
The mouthfeel is divinely soft and juicy, seducing you into sip after sip. It’s certainly one of the best B.C. beers of the summer so far — and thankfully Persephone must have known it, as it should be available until the end of the season.
Food pairing: Anything pork. How about slices of pork tenderloin with apple and melted gouda on a toasted ciabatta?
